How to make Soy milk at home with JUST 2 ingredients // by Conscious RebHell

Ingredients: 1 cup of dried Soy beans (got them from my local shop, Rugby Unwrapped!)

5 cups of Water (guess where I got it from...)


How to:

- soak the soy beans in cold water overnight (about 12/24 hours);

- when ready to use them, drain them using a colander and pour them in a high speed blender with 5 cups of fresh water for 2 minutes on high speed;

- now filter the milk from the blender using a nut milk bag or a cheese cloth over a clean container (as I use a cheese cloth, I used some wooden pegs all along the rim of the bowl I have used to keep it steady while pouring the milk inside);

- (remove the pegs) and squeeze out of the cheese cloth/nut milk bag the milk as much as you can. The residue that you are going to have inside your cheese cloth/nut milk bag is called Okara and it can be used in many different ways (vegan burgers for example, stay tuned for that recipe too! You can, for now, freeze the Okara so that is not going to go bad while you wait for my Okara burger recipe);

- pour the milk in a pan and bring it to boil on a high heat for 2 minutes, stirring continuously as the milk tends to over boil easily;

- after 2 minutes, lower the flame to a medium and keep on stirring for about 30 minutes to get rid of the "raw" taste (the more it "cooks" the sweeter it will turn);

- pour in a glass bottle and enjoy simple or maybe add a bit of maple syrup if you have a sweet tooth ;) (or keep it to make some lovely Tofu, which is my next week recipe!!!)

VERSIONE IN ITALIANO:

Ingredienti: 1 cup (150gr) di fagioli di soia secchi

1 litro di acqua


Istruzioni:

- mettere a mollo in acqua i fagioli di soia per 12/24 ore;

- quando sono pronti, scolarli con un colino e metterli in un frullatore ad alta velocita' con 1 litro di acqua per 2 minuti;

- versare il latte ottenuto in una nut milk bag per filtrarlo e separare la parte solida dalla liquida;

- strizzare quanto piu' possibile la nut milk bag. Il residuo solido che otterrete si chiama Okara e puo' essere utilizzato in varie maniere (per fare dei deliziosi hamburger vegani, per esempio! Continuate a seguirmi perche' sara' una delle prossime ricette ad essere pubblicate. Per ora, potete congelare l'Okara in attesa della mia ricetta :);

- versare il latte ottenuto in una pentola capiente, a fiamma alta per 2 minuti, continuando a girare con un cucchiaio di legno (il latte di soia tende a bollire velocemente quindi tenetelo sott'occhio);

- passati i 2 minuti, abbassate la fiamma da alta a media e continuate a mescolare con un cucchiaio di legno per almeno 30 minuti per sbarazzarvi del gusto "grezzo" del latte (piu' lo si cuoce, piu' dolce diventera');

- travasatelo in una bottiglia di vetro e gustatelo con un po' di miele o sciroppo d'acero ;) (oppure tenetelo da parte per farci del Tofu, prossima ricetta che verra' pubblicata)
