EASY PEASY LEMON SQUEEZY! How to make Vegan Lemon Curd // by Conscious Rebhell

I MISS LEMON CURD.

Not that I can't go to the supermarket and buy a jar of that, but I am trying my best to buy and consume as much vegan food I can and so...I decided to make it by myself.

Cheap and easy, takes nothing to make it!

Let's see how to make it.


// INGREDIENTS (for about 2 jars, 200 gr each):

- 1 cup of freshly squeezed lemon juice;

- 1,5 cup of sugar;

- 6 tbsp of cornstarch (or rice flour,

or arrowroot, or potato starch);

- 1 lemon zest;

- 1,5 cup of water;

- half tsp of turmeric;

- 2 tbsp of vegan butter;

- 1/4 cup of vegan milk


// HOW TO:

- put the water in a little pan and with for it to boil;

- when boiling, add lemon juice, sugar, cornstarch, lemon zest and turmeric;

- bring it to boil again on a medium high flame and keep on stirring continuously until it thickens and becomes a gel;

- when thick enough, switch off the heat, add milk (here is the recipe for the best vegan milk ever: https://youtu.be/0RSJ7YbiZ_I ) and butter (here is the link to my vegan butter: https://youtu.be/GdBZn3DBdbU ) and stir until the butter melts;

- transfer in a sterilized jar (or jars) with a funnel leaving half a centimeter form the top, close the jar and leave it to cool;

- keep it in the fridge!

VERSIONE IN ITALIANO


// INGREDIENTI (per 2 barattoli da circa 200 gr l'uno):

- 240 ml di succo di limone;

- 280 gr di zucchero;

- 6 cucchiai rasi di amido di mais;

- buccia di un limone;

- 350 ml di acqua;

- mezzo cucchiaino di curcuma;

- 2 cucchiai di burro vegano (o margarina);

- 60 ml di latte vegano (ho usato il latte d'avena fatto in casa)


// PROCEDIMENTO:

- mettete a bollire l'acqua in un pentolino;

- quando bolle, aggiungete il succo di limone, zucchero, l'amido di mais, la buccia di limone e la curcuma;

- portate a bollere continuando a mescolare fino a che il composto inziera' a rapprendersi e prendera' una consistenza tipo gel;;

- quando si sara' rappreso, spegnete la fiamma, aggiungete il latte (qui la ricetta del latte https://youtu.be/0RSJ7YbiZ_I ) ed il burro (qui la ricetta del burro del burro: https://youtu.be/GdBZn3DBdbU ) mescolate per bene fino il burro si sara' sciolto;

- trasferite il composto in dei barattoli sterilizzati aiutandovi con un imbuto, non riempiendoli completamente ma lasciando circa 0,5 cm dalla cime. Chiudete i barattoli e lasciateli raffreddare;

- conservateli in frigo!
