Gittemary Johansen is absolutely one of my favourite Youtuber EVER.

I started to follow her about 2 years ago and I saw her growing and growing with her channel until now, when she reached 85.500 followers (You go gurl!).

She is such a lovely human being and, as soon as I asked her if she would mind if I make a video of her Carrot Top Pesto, she answer back telling me that there was no problem at all (thank you!).

So, here is her recipe.

I love to save what otherwise would go to waste, and I hope you'll love this recipe as much as I love it.

I had to change a couple of ingredients because I run out of few things in my house, but the result is UNBELIEVABLE!

Let's see how it is done!


INGREDIENTS (for 3/4 people):

- a bunch of carrots with their green part still on (you'll need only the green parts);

- 60 gr of cashew nuts;

- 70 gr of extra virgin olive oil;

- 30 gr of walnut oil;

- 2 cloves of garlic;

- 2 tbsp of nutritional yeast;

- salt and black pepper to taste


HOW TO:

- cut off the green part from the carrots, wash it well and put it in a food processor;

- add both oils and process on a high speed for 2 minutes, scraping down the sides every now and then;

- add all the other ingredients (cashew nuts, garlic, nutritional yeast and salt and pepper to taste), process on a high speed for 2 minutes or until creamy and well mixed;

- that's it. Add this marvellous cream to anything you'd like (on pasta, maybe spaghetti or linguine or any kind you'd like. Or on pizza or just try it anyway you'd like and make sure to let me know how did you use it commenting under my Youtube video https://youtu.be/CXU3f1XP91c )

Gittemary Johansen e' una delle mie Youtuber preferite in assoluto.

Iniziai a seguirla 2 anni fa e l'ho vista crescere e crescere fino ad arrivare ad 85.500 followers (ad oggi).

E' una persona speciale e, quando le chiesi se avrei potuto usare la sua ricetta per farne un video, non ha esitato a rispondermi dandomi il via libera.

Quindi, eccovi la sua ricetta.

Adoro non sprecare in ogni maniera possibile e spero amerete anche voi questa ricetta speciale.

Ho cambiato un paio di ingredienti in quanto non li avevo in casa, ma il risultato e' comunque INCREDIBILE!

Vediamo come si fa!


INGREDIENTI (per 3/4 persone):

- la parte verde delle carote (il cespuglietto fatto di steli e foglie, per capirci);

- 60 gr di anacardi;

- 70 gr di olio extra vergine di oliva;

- 30 gr di olio di noci;

- 2 spicchi d'aglio;

- 2 cucchiai di lievito nutrizionale;

- sale e pepe a gusto


PROCEDIMENTO:

- tagliare l'intera parte verde delle carote, lavarla per bene e metterla nel robot da cucina;

- aggiunger i due oli e processare per 2 minuti ad alta velocita', spingendo ogni tanto verso il basso gli ingredienti che rimarrano sulle pareti del robot;

- aggiungete gli altri ingredienti (anacardi, aglio, lievito nutrizionale, sale e pepe a gusto) e processate per altri 2 minuti o fino a che il composto risultera' cremoso e ben amalgamato;
